Homemade fishcakes

Haddock, cod, salmon, potato, parsley, horseradish, spring onion, smoked salmon and brown shrimp, with a coating of flour, cornflour, paprika, sea salt, pepper and breadcrumbs, fried in coconut oil. Served with peashoots in a lemon maple dressing and creme fraiche based sauce with chargrilled cucumber and dill.

Made my mum some fish cakes.  Haddock, cod and salmon cooked in the oven,  mashed with Maris Piper potatoes and horseradish, then mixed with chopped smoked salmon, parsley and brown shrimps.  Mixture was formed into patties, coated with a flour mix of plain flour, cornflour, paprika and sea salt, then dipped in a beaten egg, the coated with breadcrumbs.  The fish cakes were then fried in coconut oil and served with  a creme fraiche based chargrilled cucumber and dill sauce on a bed of pea shoots in a lemon and maple dressing.
